Protease
Pepsin is a member of the small family of closely related aspartic proteinase enzymes. Pepsin hydrolyzes proteins and petides, including those with bonds adjacent to aromatic or dicarboxylic L-amino acid residues; preferential cleavage: Phe- and Leu-.
