General description

Levan is a polysaccharide produced by some microorganisms and plants. It is a non-typical biopolymer composed of fructose units linked by β-(2→6). Levan is an exopolysaccharide (synthesized outside the cell).

Application

Levan from Erwinia herbicola has been used as a:
  • standard for the nuclear magnetic resonance (NMR) spectroscopy analysis of levan produced by Bacillus licheniformis NS032 in sugar beet molasses-based medium
  • polysaccharide substrate to test the ability of Prevotella copri isolates to grow when polysaccharides were provided as the sole carbon source in vitro
  • substrate in levanase activity assay

Biochem/physiol Actions

Levan has various industrial applications like cosmetics, medicine, or nanotechnology. It might exhibit anti-hyperglycemic effect and anti-tumor action, prevent diabetes-induced oxidative stress and increase catalase (CAT) and superoxide dismutase (SOD) in the heart. Levan is also recognized for its immunomodulating and prebiotic actions.
