General description

D-Psicose protects and preserves pancreatic β-islets through the maintenance of hyperglycemia and by the prevention of fat accumulation in Otsuka Long-Evans Tokushima Fatty rats.

Application

D-Psicose has been used in a study to assess the bioconversion of D-fructose to D-allose. It has also been used in a study that investigated the characteristics and antioxidant activity of maillard reaction products.
