エンドグリコシダーゼHは、高マンノース型糖鎖のグリカン鎖のコア部にある2個のN-アセチルグルコサミン（GlcNAc）残基の間に存在するN-結合型グリカンの切断に関与します。
単位の定義
1単位は、37℃、pH 5.5において変性リボヌクレアーゼB 1 μモルからN結合型糖鎖を遊離します。
