- standard for the nuclear magnetic resonance (NMR) spectroscopy analysis of levan produced by Bacillus licheniformis NS032 in sugar beet molasses-based medium[2]
- polysaccharide substrate to test the ability of Prevotella copri isolates to grow when polysaccharides were provided as the sole carbon source in vitro[3]
- substrate in levanase activity assay[4]

Levan has various industrial applications like cosmetics, medicine, or nanotechnology.[1] It might exhibit anti-hyperglycemic effect and anti-tumor action, prevent diabetes-induced oxidative stress and increase catalase (CAT) and superoxide dismutase (SOD) in the heart.[5] Levan is also recognized for its immunomodulating and prebiotic actions.[2]
